IT’S GAMEDAY!!! IT’S GAMEDAY!!!! College football has finally arrived. And like a kid on Christmas morning, I can’t wait to unwrap what this season has in store!
If you’ve read the About Me page of this blog, you know that I’m a die hard Auburn fan. I graduated from Auburn in May 2010, but I’ve been cheering for them since I was 1 day old (yes 1 day…in the hospital room with my family). And I live in the most football saturated state in the country, where absolutely everyone has to pick a team and live or die by them. So football season is a REALLY big deal down here. If you’re not from Alabama or the South, there’s no way you can fully understand, but just believe me…it’s insane.
Tonight the Auburn Tigers play the Clemson Tigers to kick off the season. In honor of MY tigers (not the lame tigers from Clemson) I made some tiger-striped brownies for our football party today. I can’t wait to take them and see everyone’s reaction! I can definitely say they’re tasty because I already snuck one after the photo. The orange part is actually made with cream cheese and sugar, so it’s like having a cheesecake layer over the brownies! So good!
The original recipe actually called these “Scream Cheese Brownies” and used them for Halloween party snacks. So if you’re not a Tigers fan, you could still make these for Halloween. You could even change the colors to go along with whatever holiday you’d like. Or just keep the cream cheese mixture white and have some cool marbled brownies.
Tiger Brownies

Ingredients:
1 brownie mix with ingredients required in mix (I use applesauce instead of oil which eliminates over a thousand calories, and it tastes the same!)
8 ounces cream cheese, softened
5 tablespoons butter, softened
1/2 cup sugar
2 eggs
1 teaspoon vanilla
2 tablespoons flour
orange food coloring (optional)
Instructions:
Preheat oven to 350 degrees F.
Mix by hand your favorite brownie mix with all required ingredients.
Spread ½ of the brownie mixture in 9×13 inch pan sprayed with cooking spray.
Mix cream cheese, butter, and sugar until light and fluffy. Add eggs, vanilla, and flour and mix well. Add orange food coloring to desired color.
Spread cream cheese mixture on top of batter in pan. Drop remaining brownie batter on top and pull a knife through to swirl colors.
Bake 30 minutes at 350 degrees.



We have some excitement over here in Ireland too. The Navy v Notre Dame game is being played here. There are 35,000 Americans in Dublin this weekend along with one of your Navy destroyers. Great excitement and badly needed tourist dollars for us here on the little green island.

The brownies look delicious, but my Crimson Tide friends would be out for my blood if I colored them to match Auburn.

I am definitely bookmarking these for a fall treat. I’m sad to say that my nephew arrived in the south (leaving his family in Connecticut) to begin his freshman year at Alabama. Now, that I’ve gotten that out in the open, let me just say this is such a clever recipe.
