Parmesan Baked Shrimp

 

Just yesterday, someone commented on my post, Garlicky Baked Shrimp, and asked if it would be good with parmesan cheese in the breading mixture.  She apparently was reading my mind about what I was going to post today!  The Garlicky Baked Shrimp post has gotten a lot of attention.  It went kinda viral on pinterest a while back, and now that post is where 80% of my views come from each day.  It has gotten great reviews from everyone that’s tried it, and it’s so easy to make!

This Parmesan Baked Shrimp is very similar to the other recipe.  Hopefully people will like this one just as much as the other one!  This is a really easy-to-follow, simple recipe that yields delicious results.  And the prep time isn’t bad either.  The only thing that took a while was individually breading all the shrimp.  Still a very simple procedure, I just needed some extra hands to bread these puppies!

I did accidentally leave out one of the steps in the directions.  I forgot to spray the shrimp with cooking spray before baking.  So mine didn’t turn out as crunchy as I was hoping.  The breading turned a bit mushy in the oven.  I bet if I had remembered that step, it would’ve helped though!  That was really my only complaint, and I’ve got no one to blame but myself.  If I make these again, I’ll have to do it right next time and report back on whether or not it made them more crunchy!

Parmesan Baked Shrimp

Serves: 2

Ingredients:
24-30 medium or large shrimp, fresh or thawed
4 tablespoons lemon juice
6 tablespoons olive oil
4 cloves minced garlic
Salt & pepper
1/2 cup breadcrumbs
1/2 cup parmesan cheese

Directions:
Pre-heat the oven to 425 Fahrenheit.

In a medium bowl, combine the olive oil, lemon juice, and garlic.  In another bowl, combine the breadcrumbs and parmesan cheese.

Toss shrimp in the olive oil and lemon marinade, and season with salt and pepper.

Doing a few at a time, remove them from the olive oil and lemon marinade, and toss them in the breadcrumb mixture.

Place them in a single layer on a baking sheet that has been sprayed lightly with cooking spray. Spray the tops lightly again with the spray, and then bake in the oven for about 7-8 minutes, or until the tops start to turn golden.

  1. Made this for dinner bc I wanted something quick but not typical pre-made meals… Ah-mazing! Made with a simple herb angel hair noodles (from a box…pasta-roni?) and veggies 🙂 Total beginning to end took about 15 minutes! I’m in love, can’t wait to eat leftovers tomorrow and make it again when I have more mouths to feed so they can marvel over it as well lol 🙂 Thanks!
