I love shrimp, but seriously…who gets full from eating it?  I mean, their name literally means small.  It’s hardly a filling entree.  BUT!  This dish has all that figured out.  Because if there’s one food that’s super filling, it’s pasta.  So, we take the delicious, albeit unsubstantial, shrimp and pair it with filling, and also delicious, pasta.

The best thing about this meal is the simplicity and ease.  The whole dish can be prepared in the time it takes for the pasta to cook!  Now that’s a great solution for weeknight meals.  Plus, it uses common ingredients which I already had on hand!  The only thing I had to buy was the shrimp.

Shrimp Scampi with Linguini

Serves: 4

Ingredients:
2 t minced garlic
1 t olive oil
1/2 t dried oregano
1/2 t salt
1/2 t pepper
4 T white cooking wine
2 t corn starch
1 lb shrimp, peeled
4 c cooked linguini pasta

Directions:
Saute garlic in olive oil for 1 min over med heat. Add shrimp, oregano, salt, and pepper and cook 4 minutes more. Reduce heat to simmer.

Combine wine and cornstarch, then add to shrimp. Simmer until sauce thickens.

Divide shrimp and sauce into 4 portions and serve each over 1 c pasta.
